This pesto smells fantastic and tastes even better. It can also be stirred through pasta.
¼ cup pine nuts, toasted
1 ½ cups fresh basil leaves
1 garlic clove
¾ cup of shredded parmesan
¼ cup olive oil
Place the pine nuts, basil, garlic, parmesan and olive oil in a food processor and process until it becomes a paste.
Smear paste onto the baguette and top with tomato slices and mozzarella. Serve.
