Blue java banana bread
This bread is quick to make and is best served with a thick smear of butter.
1 ¾ cups self-raising flour
¼ cup plain flour
1 tsp cinnamon, ground
140g brown sugar
½ cup milk
50g butter, melted
2-3 overripe bananas
Preheat oven to 180°C. Grease a loaf pan. Line the base and sides with baking paper.
Sift flours and cinnamon into a large bowl. Stir in brown sugar.
In a separate bowl, add milk, eggs, butter and bananas and stir until combined.
Add the banana mixture to the flour mixture and stir until just combined. Spoon the mixture into the pan.
Bake in preheated oven for 45-50 minutes.
