Orange marmalade is always a hit around the breakfast table.
8 cups water
Place oranges and water in a ceramic bowl. Cover with plastic wrap and leave to stand overnight.
Transfer to a large saucepan. Bring to the boil over medium heat, and then reduce to simmer for one hour.
Cool slightly, measure the mixture and then add 1 cup of sugar per cup of mixture.
Stir over low heat until the sugar dissolves.
Increase heat and bring to the boil.
Cook for 45 minutes, skimming froth from the surface with a large metal spoon
Spoon into jars, seal and label.
