Hilton Brisbane has recently appointed Dario Fiorino as their new Executive Chef. Dario began his exciting culinary career at the young age of 15 in his hometown of Milan. His role in the kitchen has taken him far and wide - after working at Hilton Amsterdam as a Chef de Partie, he relocated to Australia to open Vintaged Bar + Grill as Chef de Cuisine. Dario has been a key part of the restaurant’s success, seeing it awarded with 3 prestigious chef’s hats during his tenure. 

We decided to talk with Dario to learn more about his craft and his exciting next chapter with Vintaged Bar + Grill at Hilton Brisbane.

Can you tell us how you became a chef and how long you have been at Vintaged?
I began my career at age 15 in Milan, Italy. A few years later, I travelled to the Netherlands where I joined the renowned Hilton Amsterdam as a Chef de Partie and the highly awarded Roberto’s restaurant. I moved to Australia in 2010 where I opened the popular Vintaged Bar + Grill as Chef de Cuisine.

For those interested in Vintaged Bar + Grill,  what dishes would you suggest they try?
My vision is to source the very best Australian Beef available on the market and bring to the grill. Of course, our Tomahawk is the star of our menu however, anything on the grill is worth a try!

Where do you draw inspiration for your dishes? 
I love food, meat or seafood. I just love cooking with seasonal ingredients. My cooking is very simple but using top quality ingredients. I love for food to be shared, with friends and loved ones, so you will see many more dishes created for Vintaged with a sharing vision and to go from the grill to the table.

Vintaged Bar + Grill has just launched a menu component around a black board. Can you tell us more about this? 
Our blackboard concept was created so that we could get our hands on the very best produce available each week. It is very exciting to be able to create new dishes and give our diners more options based on what’s available on the market. This has been greatly received and our diners love picking from the board!

What do you love most about Brisbane’s current dining scene? 

Brisbane’s dining scene has changed so much since I first arrived 11 years ago. There is a large variety of venues, many types of cuisines, expensive, cheap and cheerful, there’s something for everyone and every occasion in Brisbane.
