Friday's Riverside Chilli Moreton Bay Bug Pasta Recipe

Sea to the City - Brisbane's Bug & Oyster Trail is on Sunday the 7th of October. The alfresco food trail showcases fresh seafood, particularly bugs and oysters, against the spectacular backdrop of the Brisbane River. 

Along with participating in Sea to the City (with a pop-up venue along Eagle Street Pier and a Oyster Bar in the restaurant) Friday's Riverside are sharing their exclusive recipe for their newest creation - Chilli and Moreton Bay Bug pasta.

If you're more an eater and less of a chef, no worries, Friday's Riverside will have this delicious pasta special available on the menu throughout October.  

Ingredients:

20 ml olive oil
130g Moreton Bay bug tail meat
10g minced garlic
50g cherry tomatoes cut in half
1/3 chilli deseeded & minced
40g butter unsalted
180g cooked spaghetti
Fresh basil leaves
Fine sliced spring onion
Fresh flat leaf parsley roughly cut
60ml white wine
Salt and pepper to taste

Method:

1. Bring water to a boil and cook pasta for 8-12 minutes.

2. While the pasta is cooking, sautée Moreton Bay bug meat, garlic, chilli, cherry tomatoes and spring onions in a hot pan.

3. Deglaze and add butter.

4. Add pasta and season with fresh herbs.
